Bac Ha Green-tea Smoked Duck (Vit Hom Khoi)

 

Here’s another unique dish you would want in your tummies, Bac Ha Green-tea Smoked Duck (Vit Hom Khoi)

 

What you need:

 

  • ½ cup of Vietnamese green tea

  • ½ cup brown sugar

  • ½ cup of jasmine rice grain

  • coriander leaves

  • 2 duck breasts, skin on

  • 2 tbsp vegetable oil

  • 1 cassia bark stick

  • ½ tsp cracked black pepper

  • 1 tbsp light soy sauce

  • ½ tbsp fish sauce

  • 1 tsp sesame oil

  • 2 star anise

  • 2 spring onion, thinly sliced diagonally

  • 2 long chilli, julienned

  • 2 baguettes

  • Dipping sauce

  • light soy sauce

  • chilli

 

Here’s how you make Bac Ha Green-tea Smoked Duck (Vit Hom Khoi)

 

  1. Marinate the duck with sesame oil, fish sauce, soy sauce and pepper for 30 minutes. Mix well to combine

  2. Cook the meat in a saucepan for about 3 minutes or until done then set aside.

  3. Combine rice grains, sugar, green tea, cassia bark and star anise in a wok covered with foil then cover with a wire rack.

  4. Prepare the duck breast and when the wok begins to smoke in the heat place the duck on top then let it smoked for 1o minutes.

  5. Remove from the heat and let it sit for another 5 minutes.

  6. In a mixing bowl, combine the chilli and soy sauce to make a dipping sauce.

  7. Chop the meat thinly and serve in a platter with chilli, coriander and spring onions.
