  • 1/2 cup shallots finely chopped

  • 1 onion thinly sliced

  • 200mls of coconut milk

  • bean sprout, lettuce, fresh mint and Vietnamese dipping sauce

Are you ready to make Banh Xeo?

  1. Add 1 tbsp of oil in the pan (the heat should be medium). Next, fry the sliced onions  for about 10s. Then put the mince pork in. Season with 1 tsp of salt, ½ tbsp of pepper and wait until the temperature of the pork cools down before making Banh Xeo.

  1. Pancake batter: Add rice flour, turmeric, salt and about 2,5 cups of water into a bowl then mix with coconut milk and stir the mixture until it is smooth ( the turmeric will make the pancake have a great yellow color). Put the shallots into the bowl after the pancake is done, it will have the nice green texture.

  1. Now, the important stage: frying crepes. A non-stick pan is recommended for best results.

  1. Heat the pan on medium heat so when you put the batter in, you will hear the sizzle.

  1. Use a ladle and stir the batter before you pour it into the pan. Then add minced pork, bean sprouts and sliced onions to the the pan. Put the lid on the pan so it can steam the veggies to make sure they are cooked. Wait about 5 minutes.

  1. After that, lift the lid up and check the crepes whether it is cooked or not, the side of the crepe should be crunchy  and crispy.

  1. Use the spatula to turn the cake when cooked ( it will look like an omelet when ready), keep it for about 1 minute before placing it on a plate.

  1. Do this process again until you use all the batter (about 15 pancakes).

  1. The soul of Banh Xeo belongs to its sauce. You will need fish sauce, sugar, water, garlic, chili and lime.

Chop the garlic finely and mince it together with “red hot chili “ . In a bowl, put 2 tsp of sugar, 2 tbsp of fish sauce and 10 tbsp of water. Then cut a lime , squeeze to get 1 tbsp of lime juice. Add some thinly chopped carrot strips so your sauce with have more color.
