Caramelized Fish In Claypot Recipe

In this article, I will introduce to you one of the most authentic dishes in Vietnam known as  Caramelized Fish in Claypot ( Ca Kho To)


Ingredients: For  3-4 people

  • 800g or 5-6 slices of fish

  • Chopped green onions (250g)

  • Seasonings: salt, pepper, sugar, chicken stock powder

  • 6-7 tablespoons fish sauce

Optional side ingredients that go great with this dish:

  • Fresh garlic gloves or powder

  • Cucumber slices (decorations)

  • Tomatoes (decorations)

  • Lettuce (decorations)

To make the caramelized sauce:

  • 2-3 tablespoons sugar

  • 1-2 tablespoons water


Let’s go…


  1. Prepare the fish by washing it with salt water. Once the fish is dry, place it into a  pot and seasoning with 1 tsp of sugar, salt, pepper, chicken stock powder and ¼ cup of chopped green onions.


  1. Meanwhile, you can prepare the caramel color sauce by adding 2 tsp of water and 2-3 tsp of sugar into hot pan then use the chopsticks to stir it until the sugar turns to dark brown color.


  1. Turn off the heat and add about ¼ cup (60 ml) of fish sauce into a pan and stir the mixture  for a few seconds


  1. Gently pour the sauce into the fish pot. If you want more flavor, add about 2-3 tsp of fish sauce to suit your taste and stir fish until the sauce cover all of these slices.


  1. Marinate the fish for about 30 minutes, Leave the pot on high heat until the sauce boils then lower the heat and continue to cook for about 10 minutes. After that, flip the fish but you have to be careful because at this time, the fish is very soft and easy to break apart.


  1. If the hot pot becomes dry, you can add ½  cup of water (120ml) in the pot so the fish won’t burn. Put the lid on after 10 minutes.


  1. Now the fish will be ready to be served with steamed rice. This dish would be perfect for lunch or dinner occasion.
